A Little Bit of Yesterday...

Rain and Wind yesterday...it was a good day to be inside!

made a few simple Halloween cards for fun...

As always, I tweaked the recipe...
so here is the recipe I had, and what I did differently:

1/3 cup brown sugar
1/4 cup oil or melted butter
1 egg
1/2 cup pumpkin puree
1/2 cup grated carrot
1 tsp vanilla

3/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt

optional:
1/4 cup chocolate chips
1/4 cup raisins

1) Beat together: brown sugar, oil, egg, vanilla and pumpkin puree...then add grated carrot.

2) In a separate bowl: blend together the flour, baking powder, baking soda, cinnamon and salt. Stir into the wet ingredients.

3) Add optional items: chocolate chips and/or raisins.

Bake at 375F for 15-18 mins. (You may want to check them a few mins earlier)

Cool in pan before removing...very moist and tasty muffins!

*I used less sugar, replaced the butter/oil with applesauce...I used the whole can of pumpkin puree (384ml) so I used one cup of whole wheat flour + 1/2 cup oatmeal + ground flax seed...I also added nutmeg, walnuts, a sprinkle of coconut and reduced the salt.

I sautéed onion, garlic, celery, broccoli stalks, and carrots until tender...then I added snap/sugar peas, peppers and broccoli florets...then I crumbled leftover meatloaf slices (which had been previously frozen) and heated through...served on a bed of whole wheat broad noodles with seasoned tomato sauce or alfredo sauce or whatever sauce you want! Easy peasy and very tasty!
